DIY Tanya Burr Cookies

Hey guys, 

Happy October!!! 🎃

I hope you guys are all enjoying being back to school and things……ok, ill rephrase that.

I hope you guys are all getting excited for the October half term because that means HALLOWEEN and BONFIRE NIGHT and then its the countdown to CHRISTMAS!!!! 

Oh, how I love Autumn!!! 

Anyway, today i am doing a recipe for you from Tanya Burr’s book and its her white and milk chocolate cookies!! They are soooo good and I really like her book as well so i would recommend that. So here we go: 

Ingredients you will need:

  • 200g of butter
  • 300g of caster sugar
  • 1 large egg
  • 325g of self raising flour
  • A dash of milk (optional)
  • 400g of chocolate of your choice

Now onto the recipe:

  1. Preheat the oven to 200 degrees C. In a large bowl, beat together the sugar and the butter until they are creamed together.     
  2. Beat in the egg until it is fully mixed in as you dont want any bits of raw egg in the mixture.  I had a double yoker and i was very happy!!!   
  3. Now add in the flour a spoonful or two at a time, this just means its easier for you to mix it without your arm getting too tired.     
  4. Once the flour is fully mixed in, add the milk if its needed. If the mixture is too wet, add some more flour although the mixture will be quite wet anyway. Then break up the chocolate, add it in and roll out (as well as you can) little balls of dough. As you can see, the mixture is still quite sticky!! I found that by using a bit of flour on my hands, it helped to minimise the amount of excess dough on my hands although it didnt work as well as id hoped!     
  5. You then put them in the oven for 10-12 minutes but no longer. Then take them out of the oven and leave them to cool for 25 minutes at least. When you take them out of the oven, they probably wont look as though they are cooked but take them out anyway. By doing this, they become chewy on the inside and crunchy on the outside!!

Quick update…
